Goldfish Nachos

Hey guys,

During our “cheap date” week I felt like putting my own spin on the whole idea of date.  My recipe is an essential for any “man date,” that is when two dudes hang out watch TV and just kick it.  With the hockey playoffs beginning this week it is about all I can think about and this recipe came up between me and my friends while we were watching a game last night.  I discovered this special recipe with some of my closest friends one really late night.  This nacho recipe may seem very plain, but the little spin I put on them makes them an unheard-of  specialty.  In honesty, my friend was the one who insisted I make this post so I decided to indulge him.  For your next “man date” I present to you goldfish nachos. Grab a buddy and share my secret late night munchie recipe.

What you need:

  • Nacho Chips
  • Cheese
  • Cheddar Goldfish

Cover your plate in nacho chips and then sprinkle a good amount of cheese and goldfish on top, add layers if desired.

You can either make a quick plate in the microwave or heat up the oven and make a huge batch!

BAKED with an Orange Glow Shrimp

This is by far the tastiest post I have made to date.  I really enjoy seafood and the bags of shrimp were on sale, buy one get one free, so I decided to get some and see where my imagination would take me.  It really reminds me of coconut shrimp, minus the coconut coating. Its sweet and juicy with a slight hint of spiciness.  The other thing I love about the recipe is it is quick.  Shrimp doesn’t take long at all, 15 minutes in the oven and its ready to go.
I’m not kidding I really do believe this is the best tasting recipe I have made to date.  Try making this yourself, you will not be disappointed I promise.     
  • 1/2 bottle of Italian Dressing 
  • 1/2 cup of honey
  • 1/4 teaspoon of garlic 
  • 1 pinch of Cayenne Pepper
  • 1 pinch of Old-Bay seasoning
  • 1 Orange- cut into slices and squeezed 
  • 1 pound of shrimp peeled
Combine all ingredients in a bowl and mix thoroughly. After the ingredients are blended eventually, pour in a baking pan. 
Preheat the oven to 350 degrees. Make sure you keep an eye on the shrimp because if you cook them too long they will become rubbery.
Serve and enjoy, I hope you like it.

Stuffed Crust Secret

Hey everyone,

I know that pizza is that “typical” college eat and we all could just order a pie, but a homemade pizza tastes so good.  I decided I wanted to try and make a homemade stuffed crust pizza so I did a little experimenting until I figured out how to make that delicious stuffed crust.  It clicked and I decided to wrap the edges of the dough around string cheese and it ended up working perfectly.  Here are some photos of the homemade stuffed crust pizza I made.  I used the leftover dough to make pizza bites.

 

If you want to make the pizza yourself you’ll need:

  • 2 Pillsbury pizza dough tubes
  • 1 large jar of pizza sauce
  • 2 bags of mozzarella cheese
  • any toppings you would like to put on your pizza ( I used pineapples, onions, pepperoni, green peppers and mushrooms)

Now you don’t have to order a pizza if your craving stuffed crust.

Going Green Tuna Wrap

Trying to eat healthy while still enjoying your meal in a college world can be a very challenging task.  Here I created a refreshing tuna salad wrap that won’t leave you feeling shameful after eating it.

Here is what you need:

  • 5-6 oz. of tuna (1 can)
  • One small granny smith apple
  • 1 TBSP of light Mayo or plain greek yogurt
  • 2 TSP of Lemon juice
  • 1 TSP of Dijon mustard
  • Spinach tortilla wrap

Combine the tuna, mayo (or yogurt), lemon juice, and dijon mustard into a bowl and stir them together evenly.  After stirring the ingredients cut the apple up into slices and set one slice aside to add into the tuna salad.  Cut the one apple slice that was set aside into small cubes and stir this into the tuna mixture.  Evenly spread the tuna salad onto the spinach wrap and roll it up.  If desired toast the wrap. Serving the wrap heated or cold is perfectly fine it is all about preference. The apple slices that were not put into the tuna salad can now be the side dish.  I love using tuna in my recipes, its quick, easy, very cheap and is full of protein.  Leave a comment and tell me what you think about the recipe.

Cool Off with Ice

Rita’s Italian Ice is one of the most delicious Italian ice dessert chains with over 50 flavors including lemon, strawberry, chocolate and even cookies and cream.  Since today is the first day of Spring and Rita’s 20th Spring season they are celebrating with FREE ice for all their customers who come in today March 20, 2012.  Each customer is allowed one free regular sized ice any flavor they like.  If you live near a Rita’s or know one relatively close to you go out and get your free ice, you won’t regret it.
