Healthy Haze- Salmon

This week we are focusing on healthier dishes since we can all afford to add a little nutrition to our diets. Fish is a great way to have a low calorie, high nutrient meal so I am bringing you a great salmon recipe.

  • 1 salmon filet (4-6 oz) per person
  • 1 lemon
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 tbsp. dried thyme leaves
  • ½ tbsp. dried basil
  • ½ tbsp. garlic powder
  • Salt and pepper

Preheat your over to 350⁰. Then rinse and dry your fish. Place the fish in a baking dish and coat in olive oil and lemon juice, using a brush to cover all of the fish. Then sprinkle the salt and pepper, thyme, basil and garlic powder over the fish. I like to slice the whole lemon into thin slices and put them on top of the fish while it bakes. This not only gives it great flavor, but makes for an impressive presentation too. Bake at 350⁰ for 25 minutes, then turn the oven to broil and broil on high for another 5-10 minutes or until the fish is flaky and fully cooked (light pink). This is a great healthy dish with a nice fresh flavor for the spring. Note that salmon can sometimes be expensive so try to buy it on sale or I always buy in bulk at Costco and freeze some for later. This sliced beef salad recipe is pretty easy to make and even easier to take to campus for lunch.  You can experiment with different ingredients and make a delicious ready to go lunch.
